The other day I was craving some curry, but I didn’t want to go out and buy any so I decided to make my own! I normally make red curry but I wanted to spice it up (literally) and try green curry instead.

This green curry is super simple to make and costs under $10 so if you’re like me and ballin’ on a budget this is a great recipe to try. This meal is satisfying and made enough food for me and my friend and left overs for the both of us! So whether it’s 4 people, 2, or just you there will be plenty of food.
One of the things I love most about curry is that you can add really any veggies you want into the recipe. For this recipe, I used broccoli, red onions, and garlic. I also feel like spinach would be good with this recipe and/or green peppers.
Directions
To make this recipe I press the tofu and let it press for 15 minutes while I start cooking. First I minced some garlic and then cut up the red onion into slices, you can also dice it but I like having mine a bit longer/bigger. I start sauteing both of those in a pan with some roasted sesame seed oil and I start the rice. I like to use basmati rice but any rice will work. Next, I cut up the broccoli and throw it in with the other veggies to saute. I like to add a little salt after adding each ingredient because I feel like it helps to bring more of the flavor out. Then I add a can of coconut milk and 2-3 tablespoons of green curry paste. I mix it all around and then let the veggies and curry simmer.
While the curry and veggies are simmering I take the tofu out of the tofu press and cut it up into small cubes and coat it with a breading mixture. This mixture consists of arrowroot (you can also use cornflower), garlic powder, ginger powder, and a little salt. I then add toasted sesame seed oil to a pan and cook the tofu on medium-high until crispy on all sides.
Once everything is done combine all the ingredients into a bowl and top with some freshly squeezed lime and enjoy!

- 4-5 garlic cloves
- 1 can of coconut milk
- 1 cup of basmati rice
- 3 tablespoons green curry paste
- 1/4 cup arrowroot powder
- garlic powder to taste (1 tablespoon)
- ginger powder to taste (1 tablespoon)
- salt to taste
- 1 package of extra firm tofu
- toasted sesame seed oil (or any oil to saute with)
- lime juice optional
