BBQ Jackfruit Buddha Bowl

I forgot how much I love jackfruit until I made one of my favorite jackfruit recipes last night. This recipe is easy, delicious, and full of flavor! It also makes a great leftover so you can enjoy it for lunch the next day!

All you need is Jackfruit, which you can buy already marinated in BBQ sauce or you can get a can of jackfruit and choose a marinade of your own, onions, mushrooms, zucchini, spinach, rice, and little tomatoes! You can also cut up some avocado to throw into the mix as well!

Once you have all your ingredients you’ll want to saute your veggies in some olive oil and a little sprinkle of salt. While those are sauteing, put your rice on to cook. Last you will take the jackfruit and saute it separately from the other vegetables in a little bit of olive oil.

While everything is sauteing you’ll want to add some garlic powder, onion powder, pepper, and oregano to the vegetables for added flavor.

Once everything is done combine into a bowl and top with little tomatoes and/or avocado and enjoy!

Ingredients

  • Half an onion
  • One package or can of jackfruit
  • 5-7 mushrooms
  • 1-2 cups of raw spinach
  • 1 zucchini
  • 1/2 Basmati rice (any rice works)
  • Handful of small tomatoes
  • Favorite BBQ sauce to season
  • Salt, pepper, onion powder, garlic powder, and oregano. Season to preferred taste
